look on the bright side… it comes in bite-sized form 😉✨🍓🫐 these triple berry protein pie bites start with a crust made from a BTR bar & seven sunday's triple berry bright side granola. then it get's layered with my smash food's mixed berry compote + fluffy protein whipped cream + a granola crumble on top. freezer-friendly, colorful, & guaranteed to brighten your day.
also, I can't eat this granola without singing "mr. brightside" lol 🎶
Ingredients
triple berry crust
- 111 Strawberry Shortcake Superfood Bar - B.T.R. Nation

- 4 oz4 oz4 oz Triple Berry Bright Side Granola – Seven Sundays

- 1 Tbsp1 Tbsp1 Tbsp Raspberry Salt Electrolyte Mix – LMNT

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Cashew Butter, or almond butter, softened in the microwave for 15-30 seconds

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Water
toppings

triple berry crust
- in a food processor, add BTR bar, triple berry granola, & salt; blitz into powder.
- reserve ~¼-⅓ cup of crumble for topping.
- add softened nut butter to crust & mix well.
- add 1 small cookie scoop of crust mixture to the bottom of a 24 mini silicon muffin tin.; freeze until next layer is ready.
toppings
- make a batch of mixed berry compote (use any mix/match of berries!) & protein whipped cream.
- add a scoop of mixed berry compote → protein whipped cream → sprinkle of extra crust.
- freeze for 1-2 hours, then pop out of silicon muffin tins & enjoy!
