Turkey & Cauliflower Gnocchi Soup
This Turkey & Cauliflower Gnocchi Soup is a hug in a bowl with it's creamy broth and pillowy soft cauliflower gnocchi! It can also be made with shredded chicken. It's a quick and easy soup that comes together in less than an hour so it's perfect for any night of the week! I will be making this all year long and not just after Thanksgiving! I can’t wait for you to try it.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Ghee
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 5 whole5 whole5 whole Carrots, 2 diced (for mirepoix) & 3 sliced
- 2 pieces2 pieces2 pieces Celery, diced
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp dried Thyme
- 1 tsp1 tsp1 tsp Organic Poultry Seasoning
- 2 - 3 cups2 - 3 cups2 - 3 cups Turkey Breast, or chicken pre-cooked & shredded
- 6 cups6 cups6 cups Chicken Bone Broth, or chicken broth
- 14.5 oz14.5 oz14.5 oz Coconut Cream
- 2 cups2 cups2 cups Green Peas, frozen
- 12 oz12 oz12 oz Cauliflower Gnocchi - Trader Joe's, frozen

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt the ghee in large pot
- Add the onions, celery & diced carrots, cooking till soft
- Add spice
- Add chicken broth & bring to a boil
- Lower heat & immersion blend till veggies are smooth
- Add carrots, simmer 10 minutes
- Add coconut cream, stirring till combined
- Add turkey, gnocchi & peas
- Simmer 15 minutes
