ultimate fall flatbread (Edit recipe)

while it technically isn't fall yet, it's never too early to make fall-inspired recipes! this month's ingredient of the month features 2 fall staples: pumpkin & apple. since I love both, I created this sweet & savory flatbread to really get you in the fall spirit!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first make pumpkin feta dip ahead of time by adding all ingredients to a food processor; refrigerate dip until ready to serve.
  2. make cauliflower crust & shredded chicken ahead of time.
  3. to make sautéed apples, add apples & dates with a little water to a skillet; cook for 8-10 minutes or until apples start to soften & saute.
  4. add nuts sweetener, cinnamon, nutmeg, & salt to skillet.
  5. continue to cook for 10-15 minutes, slowly adding in a little water as fruit caramelizes.
  6. move apple mixture to the side of a skillet, then add in chopped prosciutto & cook for 3-4 minutes or until crispy.
  7. preheat oven to 400.
  8. add cauliflower crust flatbreads to a sheet pan & bake for 5 minutes.
  9. mix together pumpkin feta dip & chicken.
  10. to build flatbread, first add chicken mixture, then layer on sauteed apple mixture, crispy prosciutto, feta crumbles, & a sprinkle of red pepper flakes.
  11. put flatbreads back in the oven for 8-10 minutes.
  12. serve with extra pumpkin feta dip on the side & any other garnishes you enjoy!
