ultimate fall flatbread
while it technically isn't fall yet, it's never too early to make fall-inspired recipes! this month's ingredient of the month features 2 fall staples: pumpkin & apple. since I love both, I created this sweet & savory flatbread to really get you in the fall spirit!
Ingredients
pumpkin feta dip
- 6 - 8 oz6 - 8 oz6 - 8 oz Feta Cheese
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.5 cup0.5 cup0.5 cup Pumpkin Purée
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener - Lakanto
- 1 pinch1 pinch1 pinch Red Pepper Flakes
- 1 pinch1 pinch1 pinch Salt and Pepper
sautéed apples
- 222 Honeycrisp Apples, finely chopped
- 666 Medjool Dates, finely chopped
- 111 Water
- 0.5 cup0.5 cup0.5 cup Pecans, or walnuts, chopped
- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener - Lakanto
- 0.5 tsp0.5 tsp0.5 tsp Ground Cinnamon
- 0.25 tsp0.25 tsp0.25 tsp ground Nutmeg
- 0.25 tsp0.25 tsp0.25 tsp Redmond Real Salt
remaining flatbread ingredients
- 666 cauliflower crust flatbreads or buns (click for recipe)
- 1.5 lb1.5 lb1.5 lb Chicken Breast, shredded
- 666 Prosciutto, chopped
- 6 Tbsp6 Tbsp6 Tbsp Feta Cheese
- 1 pinch1 pinch1 pinch Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first make pumpkin feta dip ahead of time by adding all ingredients to a food processor; refrigerate dip until ready to serve.
- make cauliflower crust & shredded chicken ahead of time.
- to make sautéed apples, add apples & dates with a little water to a skillet; cook for 8-10 minutes or until apples start to soften & saute.
- add nuts sweetener, cinnamon, nutmeg, & salt to skillet.
- continue to cook for 10-15 minutes, slowly adding in a little water as fruit caramelizes.
- move apple mixture to the side of a skillet, then add in chopped prosciutto & cook for 3-4 minutes or until crispy.
- preheat oven to 400.
- add cauliflower crust flatbreads to a sheet pan & bake for 5 minutes.
- mix together pumpkin feta dip & chicken.
- to build flatbread, first add chicken mixture, then layer on sauteed apple mixture, crispy prosciutto, feta crumbles, & a sprinkle of red pepper flakes.
- put flatbreads back in the oven for 8-10 minutes.
- serve with extra pumpkin feta dip on the side & any other garnishes you enjoy!
