Vanilla Mousse
A simple dessert white as snow, and perfect for the holidays! This dessert can be made the night before so you can get a move on with your festive menu.
Ingredients
- 1.5 cups1.5 cups1.5 cups Heavy Whipping Cream
- 1.5 tsp1.5 tsp1.5 tsp Premium Gelatin Powder (Unflavored) - Further Food

- 4 whole4 whole4 whole Egg Yolk
- 0.5 cup0.5 cup0.5 cup Vanilla Infused Sugar, (I used Josie's Sweet Caviar Brand)

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1.5 cups1.5 cups1.5 cups Whole Milk
- 1 tsp1 tsp1 tsp Vanilla Paste, (I used Josie's Sweet Caviar Brand)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pour 2 tablespoons of the heavy cream into a small bowl
- Sprinkle the gelatin in an even layer over the cream and set it aside to bloom
- In a saucepan over medium-high heat, combine the whole milk and vanilla
- Heat the milk until bubbles form, whisking constantly
- Immediately remove the pan from the heat and reduce the heat to medium-low
- Keep mixing, drizzle ½ cup of the hot milk into the bowl with the egg yolks, then return the mixture to the saucepan of milk
- Cook the custard mixture, constantly whisking, until it begins to boil and thicken up
- Meanwhile, heat the bloomed gelatin in the microwave for 10 seconds
- Remove the saucepan from the heat and stir the hot gelatin into the mixture until well combined
- Transfer the custard into a large bowl and immediately press a piece of plastic wrap onto the surface to avoid air from getting in
- Chill the custard for at least 2 hours, until completely cooled
- When ready to finish, whip the remaining heavy cream until medium peaks form
- Remove the custard from the refrigerator, set aside
- Work in 3 batches, using a rubber spatula to gently fold the whipped cream into the custard
- Divide the mousse into individual serving cups and seal in fridge overnight for best results
- The following day, top off with any fresh fruit (I used fresh blackberries rolled in sugar for contrast against the white mousse)

Notes
Store in fridge in air tight container or cups for best results. Can last up to a week.
