Vegan Chocolate Chip Cookies
Soft and chewy chocolate chip cookies! No one would ever guess they're gluten free and completely vegan, too!
Ingredients
- 1.75 cup1.75 cup1.75 cup Gluten-Free Flour

- 1 tsp1 tsp1 tsp Baking Powder

- .5 tsp.5 tsp.5 tsp Baking Soda
- 1 pinch1 pinch1 pinch Sea Salt

- 0.333 cup0.333 cup0.333 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto, Or organic cane sugar

- .5 cup.5 cup.5 cup Brown Monkfruit Sweetener - Lakanto, Or brown sugar. +2tbsp

- 0.333 cup0.333 cup0.333 cup Avocado Oil, +2tbsp
- 0.25 cup0.25 cup0.25 cup Almond Milk
- .5 cup.5 cup.5 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia - Pascha Chocolate Co.

- 1 tsp1 tsp1 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk dry ingredients together in one bowl
- Whisk wet ingredients together in another bowl, then combine the two
- Fold in chocolate chips
- Cover and refrigerate dough for 30min+
- Roll into ~2 tbsp balls, flatten to desired thickness (these won't spread much), and place naturally colored chocolate gems on top
- Bake at 350 for 10-12 min
- Allow to cool on baking sheet for 5min, then transfer to wire cooling rack until completely cool
