Ground meat

- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

Sweet potatoes
- 2 whole2 whole2 whole Sweet Potato
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- 1 tsp1 tsp1 tsp Cumin, Ground

- .5 tsp.5 tsp.5 tsp Cinnamon, Ground

- .5 tsp.5 tsp.5 tsp Garlic Powder

- 1 pinch1 pinch1 pinch Salt and Pepper
Tofu Ricotta
- 1 whole1 whole1 whole Tofu
- 2 cloves2 cloves2 cloves Garlic, minced

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1 pinch1 pinch1 pinch Salt and Pepper
Toppings
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Spicy Chili Crisp

- 1 Tbsp1 Tbsp1 Tbsp Hot Honey

- 1 whole1 whole1 whole Avocado

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sweet Potatoes:
- Wash and dice the potatoes
- Add remaining ingredients and toss until coated with seasoning
- Bake at 375 until tender (20-30 min)
- Ground meat:
- In a pan heat olive oil and then cook ground meat until 165F (brown throughout)
- Add in taco seasoning and 1-2 tbsp water if desired.
- For the tofu:
- Drain excess liquid from the tofu
- Break the tofu up into small pieces and add it to a food processor.
- Add all of the remaining ingredients and process until smooth and creamy
- Plate and serve with remaining toppings
