My spin on a classic Italian dish - penne alla vodka. Using a pasta shape that represents my childhood: wagon wheel pasta. Nonna used to make this shape for us all the time. It's a comforting, filing and beautiful dish to make.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a sauce pan over medium heat, add butter and olive oil
  2. Once olive oil is and butter are melted together, add in the red onion and garlic - mix until onions are soft
  3. Add in tomato paste and bubble everything together
  4. While your mixture is going, be sure to boil your water and cook pasta according to directions on package
  5. Add in your vodka, cream and mix well in the sauce pan
  6. Add in your pasta water - give it another mix
  7. Once mixed, add in Caciocavallo cheese greated and allow it to melt
  8. Add your parsley, salt and pepper to taste
  9. Drain your pasta and throw it into the sauce pan, coating it in the sauce
  10. Plate with more salt, pepper, Caciocavallo and olive oil
  11. Enjoy!
