birthday cake protein cake
i have made several variations of this protein cake, but of course I had to make a b-day version for my birthday! who said birthday cake had to be a dessert? why not have it for breakfast!
Ingredients
- 1 cup1 cup1 cup One Degree Organic Oats, grind into a flour
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour
- 2 Tbsp2 Tbsp2 Tbsp Cacao Powder - Navitas Organics
- 2 Tbsp2 Tbsp2 Tbsp ground Psyllium husk, ground
- 0.25 cup0.25 cup0.25 cup Chocolate Protein Powder - Be Well by Kelly
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Otto's Naturals Grain-Free Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 1 cup1 cup1 cup Plain Greek Yogurt
- 222 Egg
- 0.5 cup0.5 cup0.5 cup Water
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 0.25 cups0.25 cups0.25 cups Beetroot, or raspberries pureed
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup Sugar Free White Chocolate Chips
- 0.25 cup0.25 cup0.25 cup Frozen Raspberries
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Vanilla Extract - Primal Palate
- 2 Tbsp2 Tbsp2 Tbsp Keto Rainbow Sprinkles - Good Dee's

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- in a large bowl, combine flour, psyllium husk, protein powder, sweetener, baking powder, baking soda, cinnamon, & salt.
- in a separate bowl, whisk together greek yogurt, eggs, milk or water, vanilla extract, & pureed beets or raspberries.
- add liquid to dry ingredients & fold together.
- grease a 9X9 pan with a little oil, then pour in cake batter.
- bake for 30-35 minutes or until a toothpick comes out clean.
- in a food processor, combine protein frosting ingredients, except the sprinkles.
- let cool, then add protein frosting & sprinkles.
- I served with an omelet & fruit!
