Winter Blend Mixed Nuts (Edit recipe)

I saw these Holiday Mixed Nuts in Costco a few weeks ago, looked at the ingredients, and figured I could just easily make them myself using way less sugar. Happy to report, these turned out beautifully (my parents tried them when they were here and loved them) and you probably already have all of the ingredients at home! The original has almonds in it but I didn’t have any so I used peanuts. Feel free to sub for almonds if you wish. I used monk fruit to keep this lower sugar but you can use whatever sugar you want!
