Zucchini Brownies
These brownies are absolutely incredible! You need to make these! ENJOY!
Ingredients
- 0.5 cup0.5 cup0.5 cup Avocado Oil
- 1.5 cups1.5 cups1.5 cups Coconut Sugar
- .5 tsp.5 tsp.5 tsp Vanilla Bean Powder
- 2 cups2 cups2 cups All Purpose Flour, Organic
- 0.5 cup0.5 cup0.5 cup Cocoa Powder, Or, Cocao Powder
- 1.5 tsp1.5 tsp1.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Himalayan Pink Salt
- 3 cups3 cups3 cups Zucchini, Grated, Keep Liquid
- 1.5 cups1.5 cups1.5 cups Semi-Sweet Chocolate Chunks, Hu Kitchen
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a mixing bowl add the oil, coconut sugar, vanilla bean powder, flour, cocoa, baking soda, and pink salt. Mix well until fully combined.
- Fold in the zucchini. Mix well until fully combined.
- Let the batter sit for 10 minutes.
- Fold in the chocolate chunks.
- Grease a 9 x 13 glass baking dish with avocado oil.
- Pour the batter in the baking dish.
- Bake the brownies at 350F for 30 - 35 minutes.
- Let the brownies cool. Slice and serve.

Notes
If you'd like to make this gluten free, you can try replacing the all-purpose flour with Bob's Red Mill Paleo Baking Flour.
