Creamy Pistachio Pecan Stuffed Dates
This quick Gluten Free Diwali dessert recipe comes together in under 10 minutes with just four ingredients. If you live outside India, you will relate to this. Diwali often falls on a weekday, it’s not a holiday. Celebrations often get postponed to weekends but a cozy little celebration at home on the actual Diwali day makes you feel connected to your roots . At the end of the work day, if you are scrambling to make a treat or two, this recipe is for you. It’s so delicious and almost feels decadent with minimal effort. I used pecan butter to stuff the dates and it is a game changer but you can use another nut butter or choice like cashew/almond/hazelnut butter.

- 6 tsp6 tsp6 tsp Pecan Butter, or nut butter of choice
- 3 Tbsp3 Tbsp3 Tbsp raw Pistachios, chopped
- 3 Tbsp3 Tbsp3 Tbsp unsweetened Coconut Flakes
