These cookie dough inspired frozen yogurt pops are a high protein, dairy free, and refined sugar free version of magnum ice cream bars!  They have a creamy yogurt center that tastes reminiscent of cookie dough, thanks to cashew butter and chocolate chips, and a crunchy dark chocolate coating! These popsicles will surely satisfy all your chocolate cravings.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium mixing bowl, stir together all ingredients for the frozen yogurt filling, except for chocolate chips, until completely smooth with no lumps. Stir in chocolate chips.
  2. Transfer the mixture into a popsicle mold and add popsicle sticks. Cover and place in freezer for at least 4 hours or until solid.
  3. For the chocolate coating, melt chocolate chips with coconut oil in the microwave in 30 second intervals, stirring between, until smooth.
  4. Remove frozen yogurt pops from the freezer and dip in chocolate, letting excess chocolate drip off. Place on a parchment paper lined tray. The chocolate will harden fast. Drizzle with more melted chocolate and sprinkle with optional flaky sea salt.
  5. Place in freezer for 10 more minutes to set. Let thaw a few minutes and enjoy!

Notes

Store in an airtight container in the freezer for up to 2 months. Use dairy free, refined sugar free chocolate chips if desired. To make these popsicles sugar free, use sugar free chocolate chips such as Lily's, and substitute the maple syrup with 1/4 tsp liquid stevia and 4 tsp unsweetened plant milk of choice.
