chopped cobb salad sandwich
all the goodies from a cobb salad made into a delicious open-faced sandwich! these bad boys are seriously full of protein, nutrients, & are flavorful as all get out. a must try quick & easy lunch!
Ingredients
- 1 whole1 whole1 whole Hard Boiled Egg
- 111 Bacon
- 0.25 cup0.25 cup0.25 cup Arugula, or greens of choice
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Avocado, diced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Grape Tomatoes, diced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Feta Cheese
- 3 - 4 oz3 - 4 oz3 - 4 oz Canned Tuna, can sub chicken or other protein
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp cobb salad + "honey" mustard dressing (click for recipe), the "honey mustard" from this recipe
- 2 pieces2 pieces2 pieces homemade grain-free bread (click for recipe)

- toss salad ingredients with greek yogurt “honey” mustard.
