These easy semi-homemade apple pie cookies are sweet, salty, and full of classic apple pie flavor! A chewy sugar cookie cup base made with storebought cookie dough, filled with ready-to-go apple pie filling, and topped with a decadent drizzle of caramel sauce and sea salt. It's the perfect cozy autumn cookie combo, and dare I say, the yummiest cookie I've ever made!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350ºF and prepare a 12-cavity cupcake pan with non-stick baking spray. Make sure the sides of each cavity are well sprayed.
  2. Slice or separate the cookie dough into 12 equal portions. Place one portion in each cavity.
  3. Bake for 16-20 minutes or until the edges are lightly golden brown.
  4. Remove from the oven and with a wooden spoon, shot glass, or rolling pin, gently press the center of each cookie down if needed to create a cup-like shape.
  5. Allow the cookies to fully cool in the pan before removing them. If the cookies are difficult to remove, run a sharp knife around the edges to release the caramelized sugar.
  6. Fill each cookie cup with the prepared apple pie filling. If the apple pie filling is quite chunky, chop it on a cutting board before using it.
  7. Top each apple pie cookie with a drizzle of caramel sauce and a sprinkle of sea salt. Enjoy!
