bánh mi loaded fries
all the yumminess of a bánh mi sandwich made into a delicious bowl!
Ingredients
pickled veggies
- Cucumber, cut into matchsticks
- Radish, cut into matchsticks
- Carrots, cut into matchsticks

- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 tsp1 tsp1 tsp Sea Salt
fries
- 1 lb1 lb1 lb Sweet Potato, or root veggie of choice, cut into fries
- 1 lb1 lb1 lb Parsnip, or root veggie of choice, cut into fries
- Avocado Oil
- 1 Tbsp1 Tbsp1 Tbsp oven-baked pork tenderloin (click for recipe), use the "all-purpose seasoning" from this recipe
spicy sauce
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 0.5 tsp0.5 tsp0.5 tsp Smoked Paprika
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
banh mi meat
- 1.5 lb1.5 lb1.5 lb Ground Pork
- 0.25 cup0.25 cup0.25 cup Coconut Aminos
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Flour, mixed in 1 T water
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground
- 0.25 - 0.5 tsp0.25 - 0.5 tsp0.25 - 0.5 tsp Gochugaru (Korean chili pepper flakes)
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper, to taste

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
pickled veggies
- add all ingredients to a bowl & fully submerging veggies in liquid.
- let sit on the counter for 20-30 minutes, then refrigerate until ready to serve.
fries
- preheat air-fryer to 390 (or oven to 400).
- in a bowl, toss together root veggie fries of choice, oil, & seasonings.
- add to air-fryer & cook for 15-20 minutes, stirring or shaking every 5 minutes (if baking, cook for 25-30 minutes).
spicy sauce
- add all ingredients for spicy sauce to a bowl; refrigerate until ready to serve.
banh mi meat
- in a large skillet, add ground pork & brown.
- in a bowl, whisk together remaining banh mi meat ingredients.
- once meat is fully browned, add mixture to skillet, then reduce heat to a simmer & allow to cook for 10 minutes or until sauce thickens, adding water as needed.
- to build bowl, first put down fries, then add banh mi meat, pickled veggies, cilantro, & top with spicy sauce.
