Crispy Chik’n & Egg Jalapeno Ranch Salad
A loaded salad always hits the spot. I like to dress my romaine and then top with all of my add ons to keep things from getting soggy. Crispy chik'n, Monterey Jack, egg, onions, and spicy jalapenos on a bed of grana padano & jalapeno ranch dressed romaine.
Ingredients
- 10 whole10 whole10 whole Plant-Based Chick'n Strips - Gardein
- 1 whole1 whole1 whole Egg, Hard Boiled, quartered
- 1 head1 head1 head Lettuce, Romaine, cut into shreds, washed & dried
- 1 whole1 whole1 whole Ranch Dressing, I used a Jalapeno Ranch

- 1 whole1 whole1 whole Grana Padano Cheese, See Recipe
- 0.5 whole0.5 whole0.5 whole Red Onion, sliced thinly
- 1 whole1 whole1 whole Green Onion (Scallion), sliced

- 3 pieces3 pieces3 pieces Monterey Jack Cheese, with hot peppers. Three slices from the brick cut into cubes (about 12 pieces)
- 1 whole1 whole1 whole Jalapeño Pepper, sliced
- 1 Tbsp1 Tbsp1 Tbsp Chives, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat your oven according to package directions for the chik'n bites. Once preheated, get your bites onto a parchment lined baking sheet and bake until crispy and golden brown.
- In the meantime, add the romaine, some of the red onions, and a generous heap of finely grated grana padano to a mixing bowl. Once the chik'n bites are finished, add as much Jalapeno Ranch as your heart desires to your lettuce and toss until everything is combined and dressed the way you like. Transfer your dressed salad to your serving plate(s). Now, it's as simple as topping your salad with all of your add ons.
- Drop chik'n bites around the salad followed by additional sliced red onion. Drop the cubes of Monterey Jack around the salad and nestle in the quartered eggs. Finish by sprinkling the green onions, sliced jalapenos, and fresh chives. Serve and ENJOY!
