- preheat oven to 400.
- add chile lime edamame, monk fruit, seasonings, cilantro, & bacon to a food processor & blitz into a finer crumble.
- to a large bowl, add edamame & bacon mixture - this is your ābreadcrumbā.
- add ground meat, green chiles, & cottage cheese to the breadcrumb mixture & combine well.
- using a small cookie scoop, make ~80-100 meatballs.
- place meatballs on a lined baking dish, then bake for ~12-15 minutes.
