Winter Orzo Minestrone Soup
This Winter Orzo Minestrone Soup is every bit a mouthful to say as it is to eat! It's extra hearty and warming with butternut, kale, carrots, celery, orzo pasta all in a rich tomatoey broth. Oh and theres bacon too because everything is better with bacon! Am I right? This makes a huge batch of soup so you will have plenty to freeze for another time.
Ingredients
- 6 - 8 pieces6 - 8 pieces6 - 8 pieces Bacon, cut in 1" pieces

- 4 whole4 whole4 whole Carrots, diced
- 4 pieces4 pieces4 pieces Celery, diced
- 1 cup1 cup1 cup Onion, diced
- 4 cloves4 cloves4 cloves Garlic, peeled & minced

- 4 cups4 cups4 cups Butternut Squash, cubed small & precooked
- 5 oz5 oz5 oz Baby Kale
- 1 cup1 cup1 cup Grain Free Cassava Orzo - Jovial Foods

- 4 cups4 cups4 cups Crushed Tomatoes

- 8 cups8 cups8 cups Beef Broth, I like Kettle & Fire

- 0.25 cup0.25 cup0.25 cup Nutritional Yeast

- 1 tsp1 tsp1 tsp Thyme, Dried

- 2 tsp2 tsp2 tsp Kosher Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 1 tsp1 tsp1 tsp Basil, Dried

- 1 tsp1 tsp1 tsp Oregano, Dried

- 0.25 cup0.25 cup0.25 cup White Wine Vinegar

- 2 cups2 cups2 cups Water, if needed to thin soup a bit

- Cook bacon in a large pot till crisp & move to paper towel lined plate
- Discard all but 2 tbsp bacon fat
- Add onions, carrots & celery & cook till onions are translucent
- Add garlic, stirring one minute
- Add broth & bring to a boil
- Add orzo & cook 10 minutes
- Add tomatoes, nutritional yeast, spice & vinegar
- Simmer 10 minutes
- Add butternut & kale, stir till kale wilts
- Add bacon
- Garnish with fresh parsley if desired
