10 Minute Instant Pot Chicken Carnitas (Edit recipe)

One of my MANY quick weeknight meals when we are on the go! I am a huge fan of my Instant Pot making my life easier on any given night. This is also the perfect addition for your Healthy Meal Prepping rotation! If I'm making "Chipotle" style bowls, I'll cook rice, sauté veggies and have salsa or guacamole to add to the bowls. If we're doing tacos, I'll heat the tortillas and let the family assemble that way! You could also take all of the ingredients for a bowl, throw them into a pot and top with a 3 cups of Bone Broth for an incredible soup. When I say this is "adaptable" ...I mean it!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add Avocado oil to Instant Pot and press Sauté.
  2. Once hot, add the Sweet Onion and let cook for 3-4 minutes.
  3. Add the rest of the ingredients to the Instant Pot minus the Cilantro.
  4. Stir to combine then secure the lid and set to Manual for 10 minutes.
  5. Once the time is up, release pressure and shred the chicken.
  6. Add chopped cilantro to the chicken and combine.
  7. Now you can add the chicken to Tortillas, top over Rice & sautéed Veggies or eat on its own!

Notes

**Make it a little crispy by adding chicken on a parchment lined baking sheet with 1/4 cup of liquid from the Instant Pot and Broil for 5 minutes
