Apple Cider Donuts
These mini paleo donuts are brimming with all the flavors the name suggests and you can almost taste that warm apple cider can't you!? They are an easy and fun way to spend time in the kitchen and fill your home with cozy aromas. Using apple cider in the batter lends so much more apple flavor to go along with the warm spices.
The coating is optional, but it does lend not only more flavor, but also a little bit of crunchy texture.
Ingredients
Donuts
- 1.25 cups1.25 cups1.25 cups Cassava Flour
- 1 tsp1 tsp1 tsp Little Palates Apple Cinnamon seasoning, can sub with cinnamon
- .75 tsp.75 tsp.75 tsp Sea Salt
- .5 tsp.5 tsp.5 tsp ground Nutmeg
- 10 Tbsp10 Tbsp10 Tbsp Organic [*Spectrum Brand, sustainably sourced] Palm Oil Shortening
- .75 cup.75 cup.75 cup Coconut Sugar
- .25 cup.25 cup.25 cup Maple Sugar, can sub with granulated sugar
- 2 whole2 whole2 whole Eggs, room temperature
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .5 cup.5 cup.5 cup Martinelli's Sparkling Apple Cider
Coating
- 6 Tbsp6 Tbsp6 Tbsp Ghee, melted & slightly cooled
- .5 cup.5 cup.5 cup Maple Sugar, can sub granulated sugar
- 1 tsp1 tsp1 tsp Little Palates Apple Cinnamon seasoning, can sub with cinnamon

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine cassava flour, baking powder, apple cinnamon blend and salt in mixing bowl. Fluff to combine, then set aside.
- Add shortening and sugars to a medium mixing bowl. Beat with a hand mixer til well combined and fluffy.
- Add eggs and vanilla, then mix again to fully combine.
- Pour this mixture into the dry ingredients and mix well to combine.
- Add batter to a plastic bag, squeezing to one corner, then snip the tip off. Approximately a ¾” wide hole.
- Heat up donut maker as directed by manufacturer then fill cavities and bake til golden.
- Remove from donut maker to cooling rack til they are cool enough to touch.
- While donuts cool, make coating by placing the ghee in a small bowl and the sugar/cinnamon in another bowl, dip/brush the donut (top only or both top and bottom) then dip in cinnamon/sugar mixture.
- Enjoy every single bite!
Notes
You can also bake these in a mini muffin tin or a donut pan in the oven at around 375 til golden!
