Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 375 F.
  2. Line a baking sheet with parchment paper.
  3. In a medium mixing bowl, combine the oat flour, tapioca starch, potato starch, baking powder, Himalayan pink salt, Apple Cinnamon blend and vanilla protein powder.
  4. In a separate mixing bowl, combine the applesauce, egg, vanilla, and maple syrup. Whisk until thoroughly combined.
  5. Pour the wet ingredients into the dry ingredients, and stir to combine. Add the ghee to the batter, and stir until incorporated.
  6. Mix in the dried cranberries and chocolate chips until evenly distributed.
  7. Using a cookie scoop, scoop the dough, placing dough balls on the parchment lined baking sheet, leaving about 2” spacing. Press them down slightly with the palm of your hand.
  8. Bake the cookies for 10-12 minutes.
