Asian Chicken Lettuce Wraps
I love an easy to prepare lunch or light meal that is refreshing on a warm summer day. These lettuce wraps are perfect for a quick lunch or light dinner, especially when you don't want to be in the kitchen a long time or heat up the house using the oven.
Ingredients
Sauce
- 0.333 cup0.333 cup0.333 cup Coconut Aminos
- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Honey
- 1 Tbsp1 Tbsp1 Tbsp Molasses
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter
- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
Meat filling
- 1 lb1 lb1 lb Ground Chicken
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 1 tsp1 tsp1 tsp Sea Salt
- 0.5 whole0.5 whole0.5 whole Zucchini, small dice
- 0.5 cup0.5 cup0.5 cup Red Onion, small dice
- 1 Tbsp1 Tbsp1 Tbsp Ginger Root, fresh, grated
- 2 clove2 clove2 clove Garlic, minced
- 2 whole2 whole2 whole Green Onion (Scallion), diced
- 1 head1 head1 head Butter Lettuce, leaves separated

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Prepare sauce in a bowl, whisk until combined, set aside.
- Wash lettuce, separate each leaf. Set aside to drain.
- In a skillet cook the meat in the oil over medium until done. Crumble meat into small bits.
- Add salt, zucchini, onion, ginger, and garlic then cook for 5 minutes. Stir periodically.
- Add green onions and turn heat off.
- Spoon the mixture into a lettuce leaf and serve.
- Serve with rice or cauliflower rice if desired.
Notes
You can use peanut butter if preferred over almond butter.
