here is a colorful, delicious, & nutritious spring side-dish using my avocado chimichurri sauce. this pasta salad can be served cold or warm!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. cook pasta according to package directions (I always like to rinse the legumes-based pastas after cooking to help get rid of the "gumminess").
  2. pre-heat oven to 400.
  3. add asparagus, squash, onion, & bell pepper to a sheet pan & toss with a little avocado oil.
  4. roast for 25-30 minutes.
  5. add pasta, roasted veggies, cherry tomatoes, & avocado chimichurri to a bowl.
  6. garnish with any additional fresh herbs.
  7. serve warm or cold with a protein of choice.
