Bacon Cheeseburger Soup
Do you love soups? I am team soup all year round and have been creating soup recipes since I was a teenager! This Bacon Cheeseburger Soup is like ordering a burger and fries in a bowl! It even has the ketchup and dill pickles! I am so excited for you to try this one. You can make it with my Cashew Cheese Sauce recipe or grab a jar of your favorite Cashew Cheese sauce to make it even easier!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 8 pieces8 pieces8 pieces Bacon, cut in 1" pieces
- 1 cup1 cup1 cup Cashew Cheesy Sauce (Core & Rind)
- 4 cups4 cups4 cups Beef Bone Broth
- 2 cups2 cups2 cups Russet Potatoes, diced
- 2 whole2 whole2 whole Carrots, sliced
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 1 clove1 clove1 clove Garlic, minced
- 13.5 oz13.5 oz13.5 oz Coconut Cream
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 0.5 cup0.5 cup0.5 cup Ketchup
- 12 pieces12 pieces12 pieces Dill Pickle Slices, for garnish

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook bacon in a large pot till crisp & move to a paper towel lined plate
- Discard all but 2 tbsp of bacon fat
- Add onion, cook till soft
- Add beef, cook till no longer pink
- Add garlic, stir one minute
- Add broth, potatoes, carrots & ketchup, bring to a boil
- Lower & simmer 15 minutes
- Add cashew cheese sauce, coconut cream, salt & pepper
- Stir well & simmer 10 minutes
- Add bacon & pickle slices for garnish
