Black Bean Huevos Rancheros Inspired Skillet
Ingredients
- 2 cups2 cups2 cups Black Beans, canned and cooked
- 1 cup1 cup1 cup Onion, diced (see notes)
- 1 cup1 cup1 cup Bell Pepper, diced (see notes)
- 4-84-84-8 Eggs
- 8.5 oz8.5 oz8.5 oz Latin Inspired Flavor Starter Sauce - Mesa de Vida, (1 bottle)
- Salt, to taste/health needs
- Cotija Cheese, or cheese of choice
- Cilantro

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add all ingredients except eggs and garnishes to a skillet. Bring to a simmer, cover, lower the heat to low & cook for 10 minutes.
- Crack eggs on top and simmer in the sauce to your desired doneness. Add a bit of broth or water if necessary.
- Serve over rice, pasta, couscous, quinoa, mashed potatoes, or with your favorite bread or tortillas on the side.
- Top with garnishes if desired.
