Black Bean Lettuce Wraps
Two kinds of bean, corn and a jar of marinara simmered together, then spooned into Bibb lettuce cups. No cooking beyond one skillet, and the filling keeps in the fridge for days.
Caramelize the onion first and give it time. The marinara does the rest of the work, so that onion is the only depth the filling gets.
