Buffalo Chicken Meatballs
Who doesn't love buffalo chicken?! These buffalo chicken meatballs will become your go-to for an easy meal-prep dinner, party appetizer, and are perfect for as a freezer meal!
Ingredients
- 1 lb1 lb1 lb Ground Chicken
- 111 Egg
- .333 cup.333 cup.333 cup Breadcrumbs
- .5 cup.5 cup.5 cup Parmesan Cheese
- 2 Tbsp2 Tbsp2 Tbsp Organic Buffalo Seasoning
- 1 Tbsp1 Tbsp1 Tbsp Garlic Powder
- 1 Tbsp1 Tbsp1 Tbsp Onion, salt
- 1 Tbsp1 Tbsp1 Tbsp Onion Powder
- 1 Tbsp1 Tbsp1 Tbsp Tajín Clásico Seasoning, or other chili-lime seasoning
- 1 Tbsp1 Tbsp1 Tbsp dried Basil
- Salt
- Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 375° and line a baking sheet with aluminum foil.
- In a large mixing bowl, add the ground chicken, egg, seasonings, buffalo seasoning, breadcrumbs, and parmesan cheese. Mix to just combine all ingredients (this works better when using your hands - a trick is to use four fingers and a rake to "rake" the ingredients together).
- Once the meat has come together, form meatballs with your hands (about two tbsp of meat per meatball).
- Place on the baking sheet and sprinkle a little more of the buffalo seasoning right on top. Bake for 30 minutes and toss in your favorite hot sauce.
