i used hearts of palm noodles for a low-carb twist & a creamy cottage cheese + cream cheese sauce instead of the traditional canned soup base, creating a comforting casserole that’s packed with protein and flavor.

Ingredients
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless, cut into ½” cubes

- 8 oz8 oz8 oz Onion, finely chopped
- 16 oz16 oz16 oz Broccoli, cut into florets, may use fresh or completely thawed frozen

- 14 oz14 oz14 oz Hearts of Palm Spaghetti
- 1/2 lb1/2 lb1/2 lb oven-baked bacon (click for recipe)
- 8 oz8 oz8 oz Cream Cheese, Light
- 1 cup1 cup1 cup Cottage Cheese, pureed
- 1-1.5 cups1-1.5 cups1-1.5 cups Chicken Broth, or water

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Arrowroot Flour
- 2 cups2 cups2 cups Cheddar Cheese, plus extra for topping casserole

- 1 tsp1 tsp1 tsp Garlic Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- in a bowl, toss chicken with salt & pepper.
- to a large skillet, sear diced chicken in a little fat, then transfer to a large bowl.
- add onions & broccoli to a skillet; cook until sauteed & moisture is evaporated.
- transfer veggies, chicken, hearts of palm noodles, & bacon to a 9X13 casserole dish.
- prepare the sauce, by adding all ingredients to a sauce pan & whisking until smooth.
- simmer sauce until thickens, then pour into casserole.
- cover & bake for 15 minutes.
- remove casserole from oven, uncover, & add additional cheese on top.
- bake for another 10-15 minutes (or until chicken reaches internal temperature of 165), with option to broil for last 3-5 minutes.
