chocolate chip pumpkin cheesecake stuffed muffins
these are basically a mash-up of my childhood favorite chocolate chip pumpkin muffins + those iconic starbucks pumpkin cheesecake muffins, but with more protein + fiber, less sugar, & better-for-you ingredients you can feel good about. š

- 2 Tbsp2 Tbsp2 Tbsp Psyllium Husk, Ground, or ground chia/flax

- 1/2 cup1/2 cup1/2 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1/2 cup1/2 cup1/2 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 2 tsp2 tsp2 tsp Pumpkin Pie Spice - Primal Palate

- 2 tsp2 tsp2 tsp Baking Powder

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/4 tsp1/4 tsp1/4 tsp Sea Salt

wet ingredients
- 1 cup1 cup1 cup Pumpkin PurƩe
- 3/4 cup3/4 cup3/4 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 222 Eggs
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

add-ins
- 1 cup1 cup1 cup Sugar-Free Dark Chocolate Chips

protein cheesecake
- 1/2 cup1/2 cup1/2 cup Cottage Cheese
- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter, or nut butter of choice

- 1/4 cup1/4 cup1/4 cup Vanilla Protein Powder - Be Well by Kelly

- 1/4 cup1/4 cup1/4 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 111 Egg
- 1/2 tsp1/2 tsp1/2 tsp Pure Vanilla Extract

- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 325.
- to a large bowl, add all dry ingredients; set aside.
- to a mixing bowl, whisk together all wet ingredients, then fold into dry ingredients bowl.
- fold in dark chocolate chips.
- in a food processor, combine all protein cheesecake ingredients.
- using 2 mini 12 insert silicon muffin tins, add a scoop of muffin batter to ~ā of the way full.
- create a small divot in the center of the muffin batter, then add ~1-2 t of protein cheesecake mixture to the center of the muffin.
- bake muffins for 30-35 minutes or until a toothpick comes out clean.
- allow to cool completely, then pop out of muffin tins.
