Cookie Dough Crunch Bars (high protein/grain-free)
What happens when you combine grain-free protein cookie dough with rice cereal? You get these incredibly delicious Cookie Dough Crunch Bars! Part protein bar and part candy bar, these cookie dough crunch bars are the best of both worlds.
Ingredients
- 1 cup1 cup1 cup Vanilla Protein Powder, I used a vegan protein
- 0.5 cup0.5 cup0.5 cup Cashew Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 0.25 cup0.25 cup0.25 cup Semi-Sweet Mini Chocolate Chips, use dairy-free, for vegan
- 1 cup1 cup1 cup Pascha 55% Organic Vegan Semi-Sweet Dark Chocolate Chips
- 0.333 cup0.333 cup0.333 cup Rice Krispies Cereal

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine protein powder, cashew butter, maple syrup and 1/4 cup chocolate chips in a bowl.
- Press dough into lined 9x5 baking dish.
- Freeze for 15 minutes.
- Slice into bars or squares, if you prefer.
- Melt the one cup of chocolate chips.
- Stir in rice cereal.
- Dip each bar into melted chocolate, making sure it is completely covered. Shake off extra.
- Chill bars until chocolate is firm.
