this recipe transforms a classic chocolate chip cookie into a mini cookie cup, then fills it with protein-packed cottage cheese ice cream & cookie dough bits for a dessert that’s nostalgic, fun, & better-for-you.
because sometimes more cookie is exactly what you need. 🤌

cookie dough ice-cream
- cottage cheese ice-cream (click for recipe)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
cookie cups
- preheat oven to 350.
- follow my instructions for making brown butter cookies.
- place cookie dough in refrigerator for 30 minutes.
- using a small cookie scoop, add 2 scoops of cookie dough to your hands, then roll into balls & place in a mini 24 divot muffin tin.
- bake cookies for 9-11 minutes.
- allow to cool for 3-4 minutes, then press down in the center of each cookie to create a cup.
cookie dough ice-cream
- follow my instructions for making cottage cheese ice-cream using a vanilla protein powder.
- make my chocolate chip protein cookie dough balls OR dice up the peanut butter chocolate chip BTR bars into small bites.
- fold cookie dough balls or bites into ice-cream, then freeze for at least 4 hours.
- to each cookie cup, add a scoop of cookie dough ice-cream & enjoy!
