Copycat Costco Cashew Clusters
Have you tried or seen the cashew clusters at Costco? Ellie wanted to get them and I saw they used 3 different sweeteners (honey, cane sugar, and rice syrup) and I was like nah I can make this at home using one sweetener. So I did, and they are glorious.
I used a silicone mini muffin tin to help them hold their shape, but I bet you could press this into a pan and break apart once it sets.
Ingredients
- 1 cup1 cup1 cup Roasted and Salted Cashews, roughly chopped
- 0.5 cup0.5 cup0.5 cup Almonds, chopped
- 0.333 cup0.333 cup0.333 cup Pumpkin Seeds
- 0.333 cup0.333 cup0.333 cup Honey, + 1 TBS

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything into a bowl. Spoon into mini muffin tin and freeze for about 30-60 min until firm. Transfer to fridge to store there. Lasts for weeks!
