Copycat S’mores Chewy Bars
Why buy chewy bars when you can make them at home?! This homemade version has less ingredients and less sugar than the store bought version. They are also a no-bake treat so it's less work for you. The size of your pan will depend on how many bars you get, so check my notes below. I love this idea to prep for a healthy afternoon snack to get through to dinner, or a pre-workout snack in the morning. These are kid friendly, too! Feel free to use any toppings and mix in's you like. I think nuts, dried fruit, seeds, sprinkles, you name it - would make a great swap. Enjoy!
Ingredients
- 2.5 cups2.5 cups2.5 cups rolled oats
- 1 cup1 cup1 cup Creamy Peanut Butter

- 0.666 cup0.666 cup0.666 cup Pure Maple Syrup

- 4 Tbsp4 Tbsp4 Tbsp Chia Seeds

- 4 Tbsp4 Tbsp4 Tbsp Water
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Semi-Sweet Chocolate Chips, plus some more for topping

- 0.75 cups0.75 cups0.75 cups Mini Marshmallows, plus more for topping

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine 4tbsp chia seeds and 4tbsp water. Let sit for 15 minutes.
- Line a small baking sheet, or an 8x8 baking dish, with parchment paper.
- Combine all ingredients in a large bowl.
- Firmly press mixture into the parchment lined dish/baking sheet until it’s evenly spread and to the edges.
- Top with some more chocolate chips and marshmallows, and firmly press them down.
- Freeze for 1 hour.
- Cut into bars. You can get 12 out of a small baking sheet, or 6-8 out of an 8x8 pan.
- Store in the freezer!
Notes
8x8 pan: 6-8 servings (bars) Small baking sheet or 9x12: 10-12 servings (bars) But feel free to cut them however you like!
