These sugar cookie bars taste JUST like those big, soft, pillowy, iced cookies you get in the grocery store - but these are a little less processed so you can feel better about them. They are easy to make and you can use whatever sprinkles you want to keep them festive for your occasion. My husband said this is his favorite thing I have made recently, and he looks forward to coming home from work to have one. Now THAT is a win!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350f and line an 8×8 baking pan with parchment paper or foil.
  2. In a large bowl, cream the butter (salted or unsalted both work), granulated sugar, and brown sugar together until smooth and creamy.
  3. Add in the egg and the vanilla extract, and mix to combine.
  4. Mix in the flour, baking powder, salt, and cornstarch until the flour mixture disappears.
  5. Spread the batter into the prepared baking pan and bake for 15 minutes (they will seem soft but they harden as they cool).
  6. Let them cool, then frost and top with sprinkles.
Slice and serve!
