Unstuffed Cabbage Roll Soup
This soup gives you all the things you love about stuffed cabbages, but in a much easier way to make them. This tomato sauce and broth based soup is full of protein, fiber and veggies - the perfect balance of ingredients in a meal. I always like to double up on my protein in a regular pot of soup, so I used 2lb of ground beef here, but feel free to go a little lighter on it and use just 1lb. It's soup so it's fun and flexible, right?!
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 2 lb2 lb2 lb Ground Beef, feel free to just use 1lb

- 0.5 cup0.5 cup0.5 cup Yellow Onion, diced
- 2 cloves2 cloves2 cloves Garlic, minced

- 4 cups4 cups4 cups Green Cabbage, chopped
- 2 whole2 whole2 whole Carrots, sliced
- 5 cups5 cups5 cups Beef Broth

- 24 oz24 oz24 oz Tomato Sauce
- 0.5 cup0.5 cup0.5 cup Rice, Jasmine

- 0.25 cup0.25 cup0.25 cup Parsley

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large pot, heat oil.
- Add ground beef and let sit for a couple minutes.
- Season with salt and pepper, and cook until mostly browned.
- Add onion and garlic, and mix in with ground beef. Cook until onions start to soften.
- Add the cabbagem carrots, tomato sauce, broth and rice. Mix to fully combine.
- Bring to a boil a let simmer for 20 minutes, stirring occasionally from the bottom.
- Serve with fresh parsley and enjoy!
