Sesame Ginger Soy Pasta Salad with Chopped Chicken
This Sesame Ginger Soy pasta salad is a fun way to serve pasta salad this summer. The flavors are fun and delicious, but a little more unassuming than your average pasta salad. I love any kind of asian flavors or influence, so I made a simple dressing - but if you want a shortcut - you can use a store bought sauce. Trader Joe's has a Soyaki sauce that is delicious and would be the perfect swap to make this even easier!
Ingredients
Sesame Ginger Soy Dressing
- 0.333 cup0.333 cup0.333 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup Rice Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Brown Sugar
- 2 Tbsp2 Tbsp2 Tbsp Soy Sauce, Low Sodium

- 1 Tbsp1 Tbsp1 Tbsp Sesame Oil

- 2 Tbsp2 Tbsp2 Tbsp Sesame Seeds
Pasta Salad
- 12 oz12 oz12 oz Pasta, I used ditalini

- 1.5 lb1.5 lb1.5 lb The Best Chicken Marinade + Baked Chicken (click for recipe), chopped, or use rotisserie chicken
- 1 cup1 cup1 cup Carrots, shredded
- 0.5 cup0.5 cup0.5 cup Cilantro, chopped
- 0.5 cup0.5 cup0.5 cup Green Onion (Scallion), sliced thin

- 1 whole1 whole1 whole Bell Pepper, diced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta according to package instructions. When finished, rinse under cold water for a few seconds to cool off.
- Bake your chicken. I linked my favorite baked chicken recipe above that I like to chop for this, but feel free to use rotisserie chicken too.
- While the pasta is cooking and chicken is baking, make your dressing.
- Add all dressing ingredients to a bowl or jar and mix thoroughly.
- When everything is finished, assemble!
- Add the pasta, veggies, dressing and chicken to a large bowl.
- Toss to combine.
- Serve fresh, or cover and chill in the fridge.
- Enjoy!
