I do believe you could pass this Creamy Cauliflower Mash off as mashed potatoes because it's that good! Just saying! They are so creamy and the perfect dish to enjoy without the added carbs.
Ingredients
- 1 whole1 whole1 whole Cauliflower, large head, cut in florets with stems chopped
- 4 Tbsp4 Tbsp4 Tbsp Ghee
- 4 Tbsp4 Tbsp4 Tbsp Kite Hill Cream Cheese
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk, or more to desired consistency
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Chives, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Boil cauliflower till tender, drain and cool till you can safely handle
- Pour cauliflower into a straining bag for squeezing out the liquid (do not skip this step)
- Return to pot and add remaining ingredients except chives
- Turn heat to medium low
- Immersion blend or use a hand mixer till smooth
- Fold in chives
