Beetroot Salad with Apples and Walnuts (Edit recipe)

This is a recipe I have been making forever.  Being a beetroot lover I am always looking for different ways to enjoy it.  This salad has such an sweet earthy flavor from the beets and added crunch from the apples and walnuts.  To make it even easier, I use store bought beets that are ready to eat out of the package!  If you love beets this is a must try!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large bowl add beets, apples, celery, walnuts and onion and toss well
  2. In a small bowl whisk together mayo, dill, salt, pepper and lime juice
  3. Add mayo mixture to beet mixture and mix well
  4. Enjoy!
