Process

  1. first, make horseradish “honey” mustard hummus by mixing all ingredients together, adding water as needed.
  2. gather all ingredients & set up a large cutting board or work surface.
  3. fill a shallow bowl or pie plate with cool water.
  4. submerge a single sheet of rice paper into the water for 3-5 seconds.
  5. transfer rice paper to your cutting board, then layer lettuce → hummus → meats → veggies → avocado → cheese.
  6. fold the bottom edge over the filling, fold in the sides, then tightly roll to create a spring roll.
  7. repeat with remaining rice paper wrappers & fillings.
  8. bake for 20-25 minutes, flipping halfway through.
  9. dip spring rolls & veggie chips in extra horseradish “honey” mustard hummus & enjoy!
