you still get all the classic bierock/runza flavors—savory beef, cabbage, onions, melty cheese, & tangy kraut—but wrapped up into crispy little spirals instead of a traditional bread dough.
thanks to the rice paper wrappers, they’re gluten-free, packed with more protein, & even sneak in some probiotics from the fermented sauerkraut.
crispy on the outside, savory on the inside, & perfect for dunking into a creamy greek yogurt burger sauce.

Ingredients
bierock's spring roll spirals
- bierock's skillet (click for recipe), just the meat portion
- 1-21-21-2 Eggs
- 10-1210-1210-12 Rice Paper Wrappers
- Kowboy Kraut - Garden Goddess

- Mozzarella, or cheddar cheese
- Sesame Seeds
greek yogurt burger sauce
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 1/4 cup1/4 cup1/4 cup Unsweetened Classic Ketchup - Yo Mama's Foods

- 2 Tbsp2 Tbsp2 Tbsp Dijon Mustard, or yellow mustard

- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 2 Tbsp2 Tbsp2 Tbsp Dill Pickle Slices, finely chopped

- 1 Tbsp1 Tbsp1 Tbsp White Wine Vinegar, or dill pickle juice
- 1 Tbsp1 Tbsp1 Tbsp Horseradish, optional

- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- make the bierock’s skillet following my instructions.
- transfer the filling to a bowl, then gather remaining ingredients & set up a large cutting board or work surface.
- to a plate, whisk 2 eggs.
- submerge a single sheet of rice paper into the egg wash until completely coated.
- transfer rice paper to your cutting board, then to the middle of the rice paper in a line, add ~¼-⅓ cup of bierock’s mixture + optional extra kraut + cheese of choice.
- roll rice paper into a cylinder, then curve it around itself to form a spiral.
- transfer to a baking sheet, then sprinkle with sesame seeds.
- repeat with remaining rice paper wrappers & fillings.
- bake spirals for 20-25 minutes.
- to make greek yogurt burger sauce, add all ingredients to a bowl & mix well.
- dip bierock’s spring roll spirals in sauce & enjoy!
