Crispy Keto Waffle Ice Cream Cone & Bowls
These keto waffle ice cream cones are super easy to make! It’s crispy & sturdy to hold your favourite ice cream scoop! What flavour of keto ice cream will you enjoy it with?! Flavor suggestions: Sesame Seeds, Ground Cinnamon, Midnight Black Vanilla, Toasted Coconut, Matcha, Dark Chocolate, Pumpkin Spice, Peppermint, Gingerbread.
Ingredients
- 3/4 cup3/4 cup3/4 cup Almond Flour, sifted
- 1/4 cup1/4 cup1/4 cup Brown Monkfruit Sweetener - Lakanto
- 1/2 cup1/2 cup1/2 cup Swerve Granular (sugar substitute)
- 1/4 cup1/4 cup1/4 cup Egg White Powder
- 1 Tbsp1 Tbsp1 Tbsp Gum Arabic (Acacia Gum)
- 1/4 cup1/4 cup1/4 cup Unsalted Butter, melted
- 1/4 cup1/4 cup1/4 cup Water
- 222 Eggs, large
- 2 tsp2 tsp2 tsp Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, add the butter and melt it in the microwave for 25 seconds.
- In another bowl, add in the almond flour, and then add in the brown sugar substitute.
- Next, add in the Swerve granular or Lakanto classic sweetener, followed by egg white powder, gum Arabic, melted butter, water, 2 large eggs, and vanilla extract. Whisk until combined.
- Pass the batter through a strainer and use a spatula to press it down. If its too course to pass through the mesh strainer, use a metal strainer instead. You might end up with about 1-2 Tbsp of batter. This can be discarded.
- Let the batter sit on the counter for about 10 minutes. Meanwhile, preheat the waffle cone maker.
- Pour about 1/8 cup of the batter onto the ice cream maker and close the lid immediately. Hold and press the lid for 10 seconds and then release. Cook the batter for a total of 2 minutes and 10 seconds. Hold for 10 seconds, then 1 minute cooking time on each side, rotating and flipping the waffle half way.
- Shape the cone with the roller shaper and transfer onto a wire rack to cool until to harden. Remove the roller shaper.
- Repeat these steps until all the batter is used up.

I made this today with the Lakanto golden. It was very quick to come together and tasted delish!!
Its a bit tricky to get the batter off because of the heat, but I ended up using tongs to get them off. They roll and shape so easy!! Once you get going, it goes quick!

I made this recipe with the newer Lakanto Brown and used Lakanto Classic in it. It was easy and provided a crunch that has been missing in my Keto way of eating. I used silicone tongs to remove from the waffle cone maker. Note, do not let the hot cone rest too long on a wooden cutting board, it can begin to stick. I made both bowls and cones and my hubby and I love them both.
