Dairy-Free Creamy Smoked Salmon and Cucumber Salad (Edit recipe)

One of my favorite meals of all time is a toasted everything bagel with cream cheese, lox, red onion, and tomato. I decided to make it into a salad, using Kite Hill cream cheese style spread so that is it dairy free. This salad is so delicious! Crunchy from the cucumber, smoky, salty, and creamy. It is so delicious, you will have this salad on repeat!

  1. Rinse the cucumber, thinly slice, and place in a bowl or container with a lid.
  2. Add in the sliced red onion, chopped smoked salmon, and chive cream cheese style spread, sesame seeds, poppy seeds, black pepper, and kosher salt.
  3. Put the lid on the container, and shake until the "cream cheese" is evenly coated on the other ingredients.
  4. Stir in the chopped avocado, and sliced grape tomatoes. Put the lid back on, and give the salad another shake to make sure all is combined well.
  5. Serve and enjoy!

This looks like a quick-and-easy Whole30 meal that would be a great for lunch on the run. I’ll certainly be adding this to my rotation.
