Dairy Free Keto Queso
This creamy, cashew based, queso style dip is a great dairy free alternative for a healthy treat! Scoop up this Tex-Mex dip with Phat Foods low carb crackers to make a tasty keto snack. This grain free recipe can be served warm or cool and can easily be made vegan.
Ingredients
- Original Phat Crackers - Real Phat Foods, or Phat Crackers of choice

- 1 cup1 cup1 cup Cashews, Raw

- .5-.75 cup.5-.75 cup.5-.75 cup Bone Broth, (or water for vegan version)

- 2 cloves2 cloves2 cloves Garlic

- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 1 tsp1 tsp1 tsp Onion Powder

- .5 tsp.5 tsp.5 tsp Cumin, Ground

- .5 tsp.5 tsp.5 tsp Chili Powder
- .5 tsp.5 tsp.5 tsp Paprika

- Salt and Pepper, to taste
- 4 oz4 oz4 oz Green Chilies, diced (4 oz can)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Soak cashews in hot water for at least 15 minutes, up to 2 hours.
- Drain cashews and add to a blender or food processor. Add broth (or water), garlic, nutritional yeast, onion powder, cumin, chili powder, paprika, and salt and pepper.
- Blend until creamy. Scrape down sides and adjust seasoning to taste. Thin with extra broth or water if desired.
- Add green chilis (or diced jalapeños if you love it spicy!) and warm in a pot over low heat stirring occasionally. Serve with Phat crackers and enjoy!
