Egg Roll In A Bowl
Finally after all these years I created one of my favorites! Egg Roll in a Bowl made with lots of fresh cabbage and delicious ingredients that taste exactly like an egg roll without the fried outer shell. We love this recipe and I especially love the leftovers for breakfast with a fried egg on top! Don’t be afraid to try it. I also use my Everything Sauce on top for that extra drizzle of spicy goodness! If you love egg rolls I cannot wait for you to try this one!
Ingredients
- 1 lb1 lb1 lb Ground Pork

- 3 Tbsp3 Tbsp3 Tbsp Sesame Oil

- 0.5 cup0.5 cup0.5 cup Onion, diced
- 3 cloves3 cloves3 cloves Garlic, minced

- 5 pieces5 pieces5 pieces Green Onion (Scallion), sliced thin, reserving some green slices for garnish

- 3 cups3 cups3 cups Green Cabbage, shredded
- 3 cups3 cups3 cups Red Cabbage, shredded
- 1 cup1 cup1 cup Carrots, grated or use carrot sticks
- 1 tsp1 tsp1 tsp Ginger Root, minced or use 1/2 tsp ground ginger dried

- 1 tsp1 tsp1 tsp Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 0.25 cup0.25 cup0.25 cup Coconut Aminos

- 2 Tbsp2 Tbsp2 Tbsp Rice Vinegar

- 2 Tbsp2 Tbsp2 Tbsp Sesame Seeds, for garnish

- Heat oil in large skillet
- Add onion, garlic & green onion to pan & sauté till translucent
- Add pork & cook till no longer pink
- Add ginger, salt & pepper, stirring to combine
- Add cabbage, carrots, coconut aminos & vinegar & cook till cabbage is tender
- Garnish with green onions & sesame seeds
