Fox Nut Pudding (Kheer) (Edit recipe)

A Paleo kheer/ pudding which is creamy and delicious, loaded with the goodness of lotus seeds/ fox nuts, nuts and dried fruits, cooked in coconut milk and mildly flavored with rose water, cardamom and saffron is delicious treat for Diwali parties and the coming festive season. Lotus seeds or Fox nuts come from the lotus or water lilies and are called "Makhana" in India. They are rich in micronutrients and a great gluten free snack as well.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Powder 3/4 cup of fox nuts and set aside
  2. Add ghee to a pan and fry the cashews till golden
  3. Add the raisins and the figs and fry till they puff up
  4. Remove the cashew nuts and the fried dried fruits and set aside
  5. Toast the 1/4 cup of the whole fox nuts in the remaining ghee
  6. Pour1/4 cup of the coconut milk and a cup of water and let the fox nuts soften in it for a few minutes
  7. Add the powdered lotus seeds at this stage and mix it well
  8. Add the fried nuts and the fruits and let that cook for a few minutes
  9. Add add the coconut palm sugar now
  10. Add the ground cardamom and the saffron, followed by the rose water, and add the remaining coconut milk
  11. Give it all a good mix and let it cook for a few minutes.
  12. Garnish with chopped pistachios and dried rose petals.
  13. Enjoy warm or cold

Notes

Coconut sugar is optional, the dried fruits add a slight sweetness to pudding already, you can substitute with honey or maple syrup before serving
