French Style Potato Salad
This French Style Potato Salad is something my grandma used to make when I was little. It's made without mayonnaise and full of delicious fresh herbs. Traditional French potato salad has cornichons (tiny gherkin pickles) but my grandmother did not put them in so I do not either but you do you! Either way this potato salad is delicious served slightly warm or room temperature. It never lasts long in our house!
Ingredients
- 3 lb3 lb3 lb Baby Potatoes, mixed colors, boiled till tender & cut in 1/4's
- 1 whole1 whole1 whole Shallot, peeled & diced small
- 0.25 cup0.25 cup0.25 cup Chicken Broth (Low Sodium)
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 0.25 cup0.25 cup0.25 cup Champagne Vinegar, or white wine vinegar
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 0.25 cup0.25 cup0.25 cup Flat Leaf Parsley
- 0.25 cup0.25 cup0.25 cup Dill Weed
- 0.25 cup0.25 cup0.25 cup Chives
- 2 tsp2 tsp2 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place all of the herbs in a food processor & chop till fine but don't over process
- Put warm potatoes in a large bowl
- Add herbs & shallot mixing with a rubber spatula
- In a small bowl, whisk together broth, oil, vinegar, Dijon, salt & pepper
- Pour over potatoes & mix gently
- Serve warm or cold
- Excess liquid will absorb into salad
