Gluten Free S’more Blondies
Is there a more quintessential summer dessert than a s’more? Not in my books! So what could be better than combining a buttery blondie with ooey gooey marshmallows, melted chocolate, and graham crackers! My Gluten Free S’more Blondies are the dessert you’ll be making all summer long, rain or shine! And trust me, the dash of cinnamon in the batter really ties everything all together!
Made with Lakanto Brown Sugar and White Sugar substitutes!
Ingredients
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted, melted

- 0.5 cup0.5 cup0.5 cup Brown Monkfruit and Erythritol Sweetener (Brown Sugar Replacement) - Lakanto

- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 2 whole2 whole2 whole Eggs
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Bean Paste

- 1 cup1 cup1 cup Gluten-Free All Purpose Baking Flour - Bob's Red Mill
- 2 Tbsp2 Tbsp2 Tbsp Cornstarch
- 1 tsp1 tsp1 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Kosher Salt

- 0.25 tsp0.25 tsp0.25 tsp Cinnamon, Ground

- 0.5 cup0.5 cup0.5 cup Mini Marshmallows

- 0.5 cup0.5 cup0.5 cup Mini Chocolate Chips, Semi-Sweet

- 0.5 cup0.5 cup0.5 cup Gluten-Free Graham Crackers - Pamela's

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F and line a 8x8 pan with parchment paper.
- In a large bowl, melt the butter and combine with the brown and granulated sugar from Lakanto. Then, add in eggs and vanilla and stir until combined.
- In a separate bowl whisk together gluten free flour, cornstarch, baking powder, salt, and cinnamon. Then gradually fold the dry ingredients into the wet ingredients.
- Gently fold the mini marshmallows, chocolate, and graham crackers into the batter.
- Spread the batter into the 8x8 pan and top with extra marshmallows, chocolate, and graham crackers if desired.
- Bake for 25-30 minutes or until a toothpick comes out clean. Sprinkle with Maldon Sea Salt and then cool the blondies for about an hour.
