Greek Pasta Salad
Every backyard get together needs a good pasta salad. Loaded with fresh veggies & herbs, tangy feta, perfectly cooked pasta, and my fave Le Grec Greek dressing. So easy peasy!
Ingredients
- 1 lb1 lb1 lb Rotini

- 1 whole1 whole1 whole Red Bell Pepper, diced
- 0.5 whole0.5 whole0.5 whole Red Onion, large onion, diced
- 0.5 whole0.5 whole0.5 whole English Cucumber, cut into quarter moons
- 1 pint1 pint1 pint Tomato, Cherry, Medley tomatoes, halved

- 0.5 cup0.5 cup0.5 cup Parsley, chopped

- 2 Tbsp2 Tbsp2 Tbsp Dill, Fresh, chopped
- 200 grams200 grams200 grams Feta Cheese, crumbled
- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Red Pepper Flakes

- 0.75 cup0.75 cup0.75 cup Greek Salad Dressing, I used Le Grec. More dressing for service.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Bring a large pot of cold water to a boil. Once boiled, add your pasta and cook until just over al dente but not soft / mushy. Monitor your pasta and taste often as it nears finishing to ensure your noods are cooked perfectly. Once, finished, strain and rinse your pasta under cold water until they cool off completely. This is where I'd typically chop all of my veggies / herbs.
- Once everything is prepped, add your pasta, veggies, herbs, feta, oregano, and pepper flakes to a large mixing bowl. Pour in the dressing and toss until everything is glossy and combined in the dressing. Cover the bowl and let the salad refrigerate for an hour before serving. For service, you may need to give an additional drizzle of dressing & toss to rehydrate and bring out the dressing's flavour. Salad is also good when it comes down to closer to room temperature if you want to remove it a bit from the fridge prior to service. Remove what you need and keep the rest refrigerated.
- Serve on the side of your favourite main or enjoy as a snack. The salad will keep for 4 days in the fridge in an airtight container.
