Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your grill to 450–500°F.
  2. Brush the cauliflower all over with olive oil and sprinkle evenly with the sea salt.
  3. Place the cauliflower on the grill with the core side facing down. Close the lid and cook for about 20 minutes.
  4. Carefully flip the cauliflower and continue grilling for another 5–8 minutes, or until tender and lightly charred in spots.
  5. Remove from the grill and let cool until it's comfortable to handle.
  6. In a small bowl or jar, combine the honey mustard, olive oil, apple cider vinegar, garlic, salt, and black pepper.
  7. Whisk or shake until smooth and well combined.
  8. Cut the grilled cauliflower into bite-sized florets and transfer to a large mixing bowl.
  9. Add the chickpeas, slivered almonds, green onions, and fresh dill.
  10. Pour the dressing over the salad and toss until everything is evenly coated.
  11. For the best flavor, let the salad sit for at least 30 minutes before serving.
  12. If time allows, cover and refrigerate for 1–2 hours to let the flavors meld together.

Notes

Cauliflower should be more al dente when coming off the grill. Not overly soft.
