spicy lamb kofta meatballs + harissa tzatziki

i used to LOVE the spicy lamb meatballs from cava, so i recreated them using ground lamb + chicken with all the warm, smoky, herby mediterranean flavors swirled right in. these mini kofta meatballs are perfect for protein-packed build your own cava bowls, meal prep, or honestly just eating straight off the pan with a little spicy harissa-infused greek yogurt tzatziki!
Ingredients
spicy lamb kofta meatballs
- 1 lb1 lb1 lb Ground Lamb - US Wellness Meats

- 1 lb1 lb1 lb Pasture Raised Ground Chicken - US Wellness Meats, or lean ground meat of choice

- 1/2 cup1/2 cup1/2 cup Cottage Cheese
- 2 Tbsp2 Tbsp2 Tbsp Greek Seasoning Blend, see notes for my homemade "kofta" seasoning
- 1/4 cup1/4 cup1/4 cup Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1/4 cup1/4 cup1/4 cup Harissa Paste, mild or spicy
- 1/4 cup1/4 cup1/4 cup Cilantro, or fresh herbs of choice
- 1 cup1 cup1 cup Protein Packed Couscous - Boostcous, cooked, may sub any GF grain or grain alternative
- 1 cup1 cup1 cup Feta Cheese
- 4 oz4 oz4 oz Prosciutto, optional , finely chopped
harissa greek yogurt tzatziki sauce
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 1/4 cup1/4 cup1/4 cup English Cucumber, finely grates
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Capers, the juice
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Dill, Fresh, or 1 t dried dill
- 1/2 tsp1/2 tsp1/2 tsp Garlic Powder

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 1/4 cup1/4 cup1/4 cup Harissa Paste, mild or spicy

- Arugula, or greens of choice
- Protein Packed Couscous - Boostcous, may sub any GF grain or grain alternative
- English Cucumber
- Pickles

- Feta Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
spicy lamb kofta meatballs
- preheat oven to 400.
- to a bowl, add all meatball ingredients & combine well.
- using a small cookie scoop, make mini meatballs (~70-80).
- place meatballs on a lined baking dish, then bake for ~12-15 minutes.
harissa greek yogurt tzatziki sauce
- in a bowl, combine all ingredients; refrigerate until ready to serve.
building your own CAVA inspired bowl
- to a bowl, start with a base of greens + grains of choice, then layer on: spicy lamb kofta meatballs → harissa greek yogurt tzatziki sauce → any other CAVA inspired toppings you like (I listed some of my favorites!)
Notes
- homemade "kofta" seasoning blend:
- 1 T garlic powder, 1 T onion powder, 1 T cumin, 1 T paprika or smoked paprika, 1 T coriander, 1 T salt, 1 T black pepper, 1/2 T turmeric, 1 t cinnamon, 1 t ginger, 1 t allspice,1 t cardamom, 1 t cayenne pepper, optional
- quick "pickled" red onions:
- 1 red onion, finely sliced + 1/2 cup beet kvass + 1/2 cup water + 1/4 cup golden monk fruit
- in a bowl combine all ingredients & refrigerate for at least 30 minutes before serving.
- homemade GF "pita bread":
- 1 box good dee's mix + 1 egg + 1/2 cup greek yogurt + 1 T ACV
- preheat oven to 350.
- to a mixing bowl, whisk together greek yogurt, egg, ACV, & water.
- add bread mix to wet ingredients & create into a dough; add any additional water as needed.
- cut dough into ~10 balls, then flatten out into round little discs.
- bake for 15-18 minutes (flipping halfway through) or until golden brown on top.
